Almost every pipe tune is built from the same skeleton: eight-bar parts, repeated. Two or four parts, eight bars each, with the parts played twice — that pattern covers nearly every tune we play.
Strathspeys, reels, and 4-4 marches are the exceptions — they don't repeat their parts. Everything else in the piping repertoire repeats; these three tune types are played straight through instead, which I think traces back to Highland dance.
First and second endings are just a space-saving shortcut for a tune with a small variation. Instead of writing out a whole extra line for one different bar, the tune shows you a bracketed first ending and second ending so you know which way to go.
