A jig is defined by its rhythm, not just its 6/8 time signature: three even eighth notes per beat, and no dot-cuts, ever. If an old book prints dots and cuts into a jig setting, my advice is to ignore them — a jig played right is straight and even, which is exactly what separates it from a 6/8 march written in the same time signature.
There are two completely different kinds of dots in bagpipe music, and mixing them up wrecks your jig timing. A dot paired with a cut gets held almost the whole beat while the cut note is crushed short, but a lone dot with no cut simply adds half its note's value — in a jig, that lone dot just means one full beat, nothing more dramatic.
Good jig playing has almost nothing hidden in it — it's just even, clean, and consistent, which is exactly why it's hard. My advice is to master the GDE combination, keep your hands loose, and keep your gracenotes small — there's nowhere left to hide bad technique, which is exactly why jigs are such a good tool for fixing your overall form.
