The Short Version

Almost every short-beat-note error is the same error: going in too early. The fix is never the short note itself — it's the note before it. Hold that setup note for its full value and the gracenote lands on the beat by itself.
When tension wrecks a movement, strip everything out and sneak it back in. Play the phrase with no doublings or gracenotes until it flows, then add elements back one at a time. You will find the exact trigger — and retrain the panic response while you're at it.
Make relaxed hands and good form the win condition. Not every doubling, not crisp technique — if you can play a phrase or a whole tune with loose hands and low fingers, that's a win. Miss half your doublings now and you'll get them all later, with far more consistency.
